We tried this last week…it was pretty good, although I have to admit I still prefer green cabbage. I guess it’s that strong Irish blood in me!
1 tbsp. bacon fat (or other fat of your choice — bacon just tastes good!)
1/4 cup diced onion
2 cups finely shredded red cabbage*
salt and pepper
1/3 cup apple cider vinegar
stevia drops to taste
Heat iron skillet to medium heat and cook onions in bacon fat until translucent. Add cabbage and sprinkle with salt and pepper. Cook and stir frequently until cabbage is crisp-tender, then add apple cider vinegar. Cook, stirring occasionally, until liquid is absorbed and cabbage is tender. Remove from heat and stir in stevia (I used 6 drops) before serving.
*NOTE: Mine did not turn out as tender as I would have liked. Next time I make this I’m going to try shredding the cabbage a little more finely!
