A great low carb side dish! Seen in action here.
2 cups fresh broccoli, steamed and chopped
1/2 cup sour cream (full fat, if you know what’s good for you!)
1/2 cup grated Swiss cheese
2 tbsp. unsalted butter, melted
1/4 cup grated Parmesan
Preheat oven to 350
Grease appropriate sized casserole dish (I use bacon fat)
Combine sour cream, Swiss cheese and melted butter in a separate bowl. Stir until well combined. Add broccoli and stir gently just until broccoli is coated. Spoon into prepared casserole dish. Sprinkle with Parmesan.
Bake at 350 for 25-30 minutes (Parmesan should be light golden brown). Allow a few extra minutes in oven if casserole made in advance and refrigerated before baking.
NOTE: I used Swiss because that’s the variety we already had open. Most cheeses would work well for this…I’m eyeballing a new Gruyere sitting in the ‘fridge for the next time around!
