Brian’s CV: How I got Here!

So I see MJ dropped in a post talking about her history and how she got here so I thought I’d do the same. So let’s start at the beginning. I’m forty seven years old and spent thirty or so years working in kitchens.

Unfortunately growing up in Chicago around the amazing junk food there gave me a diet that would have killed Dom Deluise. I was a deep dish pizza swillin’, double cheese burger scarfin’, Vienna dog chompin’ dyed in the wool carb addict.

In my mid-thirties I found out I had two kinds of arthritis which led to my gaining about a hundred and fifty pounds.

Which, as you might imagine, led to some pretty horrific health issues. Nothing specific like diabetes but the poundage really exacerbated the arthritis symptoms making the pain pretty severe. I had days where I couldn’t get off the futon and I couldn’t work anymore.

The journey chronicled on this site actually began when a blog I read on a daily basis put up a link to the movie Fathead. That lead to Gary Taubes Why We Get Fat and the rest was history.

And they prompted me to ask what seemed in retrospect like an obvious question: what did God provide as fuel to the human body. As a car takes gas and a predator needs meat what is the ideal food for us?

So we’ve been doing some variant of LCHF for about a year now with a little time off in the middle of the year for bad behavior. After our pause that didn’t refresh we’re back on and hitting it hard.

We feel like we’ve plateaud a bit and are going to revert to an induction style menu plan for a couple of weeks and see what that does. We’re specifically cutting back on artifical sweeteners and dairy this time to see if they are the culprits. If you have any suggestions please drop them in comments.
